Healthy banana muffins with hemp seeds

Muffins are easy to eat under any circumstances. It's a good idea to have them on hand when traveling, during busy days, or to have them prepared for your child's second breakfast for school.
Most of the ingredients in this recipe support brain health - which is just what you need to start your day effectively!
A healthy recipe for banana muffins:
Ingredients:
2 tablespoons of ground flax seeds
6 tablespoons of warm water
1 cup light spelt flour or all-purpose gluten-free flour
1 teaspoon of baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon fine sea salt
1/2 cup coconut sugar
1/2 cup coconut oil, melted but not hot (or grapeseed oil)
2 very ripe bananas (1 cup smashed in total)
1 teaspoon vanilla extract
1/4 cup hemp seeds
Optional: 1/4 cup chopped walnuts
Preparation:
Preheat the oven to 180 degrees.
Prepare muffin molds.
In a medium bowl, mix ground flax seeds with warm water and set aside.
In a large bowl, mix flour, baking soda, baking powder and salt.
In a bowl with flax seeds: smash bananas, add sugar, oil, vanilla extract and mix well.
Add the wet ingredients to the dry ingredients and mix well.
Add hemp seeds and stir again to combine ingredients.
Fill the muffin tins evenly with the mixture.
Bake for about 25 minutes or until golden on top, until a toothpick inserted into the center of the cake comes out dry and clean.
Allow to cool for about 15 minutes before serving.
